Had a little comp time to use and what better way than going to work midday on my birthday? The MM put on his mapron (that's a man's apron) and made pancakes with OSM mix from The Bunnery in JH. Worth the postage, it is, if you're not going to be in the prettiest valley in the world anytime soon.
Then I put together a Southwest King Ranch Casserole (from the Whole Foods Cookbook). This mixture of spicy chicken, tortillas, tomatillo salsa, cheese, and green chilis is setting up in the fridge for a little gathering we're having tomorrow night and I am some kind of excited to see how it comes out. I'll post some photos when it comes out of the oven. Here's a link to someone's blog who actually had the patience to type up the recipe.
Also on the menu: Manchego and peach mango chutney, fried green tomatoes, green salad and apple pie.
