New Year's Day Lunch

The Hoppin' John New Year's Day lunch was a hit! I rounded it out with collard greens and kale, skillet cornbread, a banana chocolate chip cake and spiced cider. I did Part I of the Hoppin' John--cooking the peas and ham-- the day before:

The secret to all this deliciousness? Pig. Seriously, between the Hoppin' John and the greens, I cut up that pound of Tasso and two packages of bacon. That's a lot of pig.  Let the new year's resolutions involving healthy food start on January 2nd!
