After a long day of travel on Monday, the Mountain Man may be recovering from a cold, but has probably given it to me. I am in need of a quiet weekend.
For a lack of photos, let me suggest that you try this for dinner tonight if you only have 30 minutes to cook and eat: Go buy a rotisserie chicken from the deli section, cut up about half of it into bite size pieces and toss it in a bowl with:
1 cup of seedless red grapes, halved
1/2 cup of flat leaf parseley, chopped
1 whole square of feta cheese (don't skimp and buy cheap crumbled stuff)
4 tbsp of fresh lemon juice
Fresh mint if you have some in your garden
Then cook 1 cup of quinoa, drain, and add that to the rest of it. Season with plenty of salt and pepper. Enjoy.
