A Pinterest Recipe Win

It's always a happy night when a Pinterest recipe turns out to be awesome. This Thai Chicken salad was just that. Interesting textures and flavors and healthy too. We couldn't find a red chili pepper, but it was fine without the extra heat. Originally on the food blog Jo Cooks, and also on my Good Eats board, which, incidentally, the MM asked me to sub-categorize because he was getting lost hunting for the night's recipe.
