This beautiful Spicy Quinoa, Cucumber and Tomato Salad recipe ran in the New York Times earlier this week.  There are some perfect looking Montana (hydroponic, admitedly) tomatoes and Haas avocados at the grocery store this week, so I think it'll be on our weekend menu while my mom visits us--she arrives today!
House Beautiful also ran a story about this amazing looking cookbook, MIXT Salads by Andrew Swallow.  The featured recipe was a "man's salad,"  filet mignon, roasted potatoes, bleu cheese and romaine lettuce.  While that won't help you get your daily serving of vegetables, it would likely be a huge hit at a summer dinner party.  HB doesn't seem to have posted the story yet, but I think I'm going to have to just buy the cookbook. 

I'm out for the rest of the weekend.  Going to spend some quality time with my mama!

I made the salad from the NYT as well. . . I really liked it but next time, I will go for 2 jalapeno peppers instead of 1!

Agreed! I went easy on the serrano because my mom doesn't like spicy food, but it was a little bland.
